Granny Wallace’s Old-Fashioned Gingerbread Squares

This recipe was found among the same writings of Nina Wallace as her Christmas Message (previously posted).


  • 1 Cup    Molasses
  • ½ Cup   Sugar
  • ½ Cup   Boiling Water
  • 1 Tsp     Soda
  • 1 Tsp     Ground Ginger
  • 1 Tsp     Cinnamon
  • ½ Tsp    Salt
  • ½ Tsp    Allspice
  • 3½ Cups  All-purpose Flour

Combine Molasses & Sugar and mix well.

Add each ingredient in the order listed while continuing to mix well.

Spread mixture in a 13 x 9 x 2 in pan and Bake at 350 degrees for 25 minutes.

Do not remove from pan but allow to cool completely.

Spread on Lemon Cream Cheese Frosting from recipe below.

Cut into squares (15-18 servings).

Lemon Cream Cheese Frosting


  • ½ package of softened Cream Cheese (8oz)
  • ¼ Cup of softened Butter
  • 2 Cups of sifted Sugar (XXX)
  • 1 Tsp of grated Lemon Rind
  • ½ Tsp of Lemon Extract

Combine cheese & butter and beat until light and fluffy

Add Sugar and beat well

Stir in Rind & Extract

Yields about 1 Cup
